Elevate pork burgers with sweet and tangy homemade relish.
Ingredients:
  • 25g butter
  • 18.20 gm olive oil
  • 1 large red onion, halved, thinly sliced
  • 1 cinnamon stick
  • 2 green apples, peeled, cored, cut into 1.5cm pieces
  • 54.00 gm maple syrup
  • 20.00 ml balsamic vinegar
  • 20.00 gm cold water
  • 70g (1/3 cup) pitted prunes, coarsely chopped
  • 10.60 gm lemon juice
  • 27.30 gm olive oil, extra
  • 2 tsp chopped fresh thyme
  • 1/2 tsp finely grated lemon rind
  • 800g pork mince
  • 25g (1/3 cup) fresh breadcrumbs
  • 90g (1/3 cup) light sour cream
  • 5.90 gm wholegrain mustard
  • 6 wholegrain bread rolls, split, toasted
  • Salad leaves, to serve
  • Sliced tomato, to serve
  • Sweet potato wedges, to serve
Instructions:
  • In a frying pan over medium heat, sauté red onion and cinnamon in a mixture of butter and oil until the onion is soft, about 5 minutes. Add apple, maple syrup, vinegar, and water. Cover and simmer for 10 minutes, stirring occasionally, until everything is soft. Mix in the prunes and simmer for an additional 5 minutes until soft. Finish by stirring in lemon juice, season to taste, and enjoy!
  • Preheat the oven to 200°C. Heat extra oil in a large non-stick frying pan over medium-low heat. Cook brown onion, garlic, thyme, and lemon rind for 5-6 minutes until soft. Transfer to a bowl and let it cool for 10 minutes. Mix in the mince and breadcrumbs, season, then divide the mixture into 6 portions and shape each into a 2.5cm-thick patty.
  • Prepare a baking tray with baking paper. Use a paper towel to clean the frying pan. Heat the remaining oil in the pan over medium-high heat. Cook the patties for 2-3 minutes on each side until browned. Place the patties on the prepared tray and bake for 10-12 minutes or until fully cooked. Let them rest for 5 minutes before serving.
  • Mix sour cream and mustard in a bowl. Place roll bases on plates. Spoon the sour cream mixture onto the rolls, then add salad leaves, tomato, patties, and relish. Serve with the remaining roll and some wedges.
