Indulge in maple pulled pork with apple slaw on burger buns for a mouthwatering meal.
Ingredients:
  • 1 Pork Boneless Leg Roast, string removed
  • 1 brown onion, sliced
  • 3 garlic cloves, crushed
  • 410g can tomato puree
  • 80ml maple syrup
  • 23.40 gm Dijon mustard
  • 250ml water
  • 2 tsp dried mixed herbs
  • 500.00 ml Brand Coleslaw Mix
  • 2 Granny Smith apples, cored, cut into matchsticks
  • 125ml coleslaw dressing
  • 8 baby cos lettuce leaves
  • 8 Kaiser Rolls, split, toasted
Instructions:
  • In a large deep saucepan over medium-high heat, heat oil until shimmering. Sear pork on all sides for 10 minutes, until nicely browned. Remove pork and place in a heatproof bowl.
  • Saute onions until starting to brown. Stir in garlic and paprika until fragrant. Add tomato puree, maple syrup, mustard, water, and mixed herbs, and bring to a simmer. Return pork to the pan, cover, and simmer on low for 2 hours until tender. Shred meat, discard fat, and toss with 1/2 cup (125ml) cooking liquid.
  • In a medium bowl, mix coleslaw, apple, and dressing. Then, place lettuce on bun bases, top with pork, apple slaw, and bun tops to serve.
