Indulge in a delectable Christmas ham effortlessly made to perfection in the slow cooker.
Ingredients:
  • 2kg leg ham on the bone, scored (see note)
  • 23.40 gm wholegrain mustard, plus extra, to serve (optional)
  • 45g (1/4 cup, lightly packed) brown sugar
  • 60ml (1/4 cup) maple syrup
  • 40.00 ml dry sherry
Instructions:
  • Trim the ham by cutting around the shank with a small sharp knife about 10cm from the end. Gently slide the knife under the rind around the edge and use your fingers to lift off the rind in one piece. Score the fat in a diamond pattern.
  • Coat ham generously with tangy mustard and a hint of sugar. Gently lay it in the slow cooker and drizzle with rich maple syrup and flavorful sherry. Let it simmer and soften for 5 hours on High heat, gently flipping occasionally until the ham is easily shredded.
  • Place the ham on a platter and delicately shred it. Pour the cooking juices into a small saucepan and let it simmer over medium heat for 8 minutes or until it thickens and becomes sticky. Pour the glaze over the ham and optionally serve with extra mustard on the side.
