Indulge in succulent maple-mustard pulled pork sandwiches paired with crispy oven-baked chips.
Ingredients:
  • 500g Pork Belly
  • 125ml maple syrup
  • 125ml chicken stock
  • 23.40 gm wholegrain mustard
  • 23.40 gm Dijon mustard
  • 2.40 gm celery salt
  • 4 Brioche Burger Buns, split
  • 1/2 baby red cabbage, shredded
  • 1 carrot, peeled, cut into matchsticks
  • 1 Granny Smith apple, cored, cut into matchsticks
  • 125.00 ml coriander leaves
  • 39.60 gm mayonnaise
  • 20.00 ml apple cider vinegar
Instructions:
  • Preheat the oven to 140C. Put the pork in a small roasting pan. Mix maple syrup, stock, mustard, and celery salt in a jug. Pour over the pork and make sure it is well coated. Cover the pan tightly with foil.
  • Roast the pork for 3 hours until very tender, turning occasionally. Then uncover and roast for 30 minutes until the syrup reduces and caramelizes. Remove and discard the rind, then shred the pork using 2 forks.
  • Make the apple coleslaw by mixing cabbage, carrot, apple, and coriander in a large bowl. In a separate small bowl, whisk together mayonnaise, vinegar, and seasonings. Drizzle the dressing over the cabbage mixture and toss everything together to combine.
  • Stuff rolls with a delicious mixture of pork and apple coleslaw.
