Elevate your meal with our irresistible crispy maple mustard pork belly.
Ingredients:
  • 1kg Pork Belly Roast Boneless, scored, patted dry
  • 54.00 gm maple syrup
  • 11.80 gm wholegrain mustard, plus extra, to serve
  • 2 tsp apple cider vinegar
  • 2 tsp finely chopped fresh rosemary
  • Fresh rosemary sprigs, to serve
Instructions:
  • Preheat the oven to 220C/200C fan forced. Place the pork on a wire rack over a roasting pan, ensuring the rind is facing upwards. Add water to the pan, filling it just below the pork. Generously season the pork rind with salt, making sure to massage it into the cuts. Roast for around 40 minutes or until the rind begins to crisp up.
  • Mix together the maple syrup, mustard, vinegar, and rosemary in a bowl.
  • Lower the oven temperature to 200°C/180°C fan forced. Continue roasting the pork, adding water as needed, for 1 1/4 hours more until the skin is crispy and the meat is tender. Pour over the maple syrup mixture and bake for additional 5 minutes until the skin turns a dark golden color. Allow to rest for 10 minutes, then slice and garnish with rosemary sprigs and extra mustard, if desired.
