Ingredients:
  • 54.00 gm maple syrup
  • 46.80 gm mustard
  • olive oil cooking spray
  • 4 (200g each) pork cutlets, trimmed
  • 1 medium brown onion, chopped
  • 1 tsp cumin seeds
  • 150g baby spinach
  • 2 x 400g cans cannellini beans, drained, rinsed
Instructions:
  • Mix together the sweet maple syrup and tangy mustard in a bowl.
  • Preheat a non-stick frying pan over medium heat. Gently spray oil on both sides of the pork. Cook for 6 to 8 minutes per side, basting with maple syrup mixture until pork is cooked through. Transfer to a plate, cover, and let rest for 5 minutes.
  • Spray a medium frying pan with oil and heat over medium heat. Add onion and cook, stirring, for 5 minutes until soft. Stir in garlic and cumin, cooking for 1 minute until fragrant. Add spinach, beans, and 2 tablespoons of cold water. Cook for 5 minutes, stirring occasionally, until the spinach is just wilted and the beans are heated through.
  • Present the juicy pork alongside the flavorful bean mixture.
