Maple-Mustard Pork

Maple mustard pork tenderloin coated in Gold Medal® flour - ready in 20 minutes for a flavorful dinner.
Ingredients:
  • 1 pork tenderloin (about 1 lb)
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon canola or olive oil
  • 1/4 cup plus 2 tablespoons water
  • 2 tablespoons real maple syrup
  • 2 tablespoons Dijon mustard
Instructions:
  • Cut the pork in half lengthwise, then halve each piece crosswise. Place each pork piece between plastic wrap or waxed paper, with the cut side up, and gently pound with a meat mallet or rolling pin until it's about 1/4 inch thick.
  • Combine the flour and salt in a shallow dish, then coat the pork with the mixture.
  • In a 10-inch nonstick skillet over medium-high heat, warm the oil until shimmering. Sear the pork for 4 to 5 minutes on each side until it's golden brown on the outside and cooked through. Set aside the pork, cover to keep it warm.
  • In a small bowl, whisk together water, maple syrup, and mustard until well combined. Pour the mixture into a skillet and cook, stirring, for about 1 minute until it slightly thickens. Drizzle the sauce over the pork before serving.
