Maple mustard glazed roasted vegetables for a flavorful side dish.
Ingredients:
  • 2 pounds potatoes, cut into 1-inch pieces
  • 0.5 pound fresh green beans, trimmed
  • 1 yellow onion, thickly sliced
  • 0.25 cup maple syrup
  • 3 tablespoons soy sauce
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
Instructions:
  • Heat your oven to 400 degrees F (200 degrees C).
  • Arrange the potatoes, beans, and onion in a 9x13-inch casserole dish.
  • Combine maple syrup, soy sauce, mustard, olive oil, and garlic in a bowl for a flavorful dressing. Drizzle over veggies and toss gently until well coated. Cover with aluminum foil to lock in the delicious flavors.
  • Roast in the oven for a golden 25 minutes.
  • Take the roasted vegetables out of the oven, uncover them, and give them a good stir to make sure the sauce is well mixed. Lower the oven temperature to 350°F (175°C).
  • Continue to roast the vegetables in the oven, leaving them uncovered, for an extra 25 minutes.
  • Take out of the oven and toss the ingredients once more for even cooking. Put back in the oven and bake until tender, approximately 25 minutes. Serve hot or warm.
