Delicious glazed ham recipe with maple syrup, honey, and tangy mustard for the perfect balance of sweetness and caramelization. Ideal for Christmas or any special occasion.
Ingredients:
  • 100g (1/2 cup, firmly packed) brown sugar
  • 80ml (1/3 cup) maple syrup
  • 80ml (1/3 cup) honey
  • 23.40 gm dijon mustard
  • 1 (about 8kg) whole leg ham, on the bone
  • Whole cloves, to stud
Instructions:
  • Combine the sugar, maple syrup, honey, and mustard in a bowl, stirring until the sugar dissolves.
  • Preheat your oven to 170C and line a large baking dish with 2 layers of non-stick baking paper. Place the oven shelf at the lowest position. With a sharp knife, cut around the shank of the ham about 10cm from the end. Carefully cut under the rind around the edge of the ham and lift the rind off in one piece. Score the fat in a diamond pattern about 5mm deep and insert cloves into the centers. Transfer the ham to the prepared dish.
  • Generously coat the ham with one-third of the glaze. Roast in the oven, remembering to baste with glaze every 25 minutes, for 1 hour and 30 minutes.
