Serve up a Nordic-inspired glazed ham for a festive Christmas meal.
Ingredients:
  • 6-7kg whole leg ham on the bone
  • 110g brown sugar
  • 80ml maple syrup
  • 80ml honey
  • 23.40 gm Dijon mustard
  • 62.50 ml chervil sprigs, to garnish (optional)
  • 1 lemon
  • 6 firm pears (such as beurre bosc)
  • 55g brown sugar
  • 60ml maple syrup
  • 3 cinnamon quills
  • 4.40 gm vanilla extract
  • 150g cranberry
Instructions:
  • Preheat the oven to 180°C. Peel the skin off the ham, keeping the fat layer intact, then score the fat in a diamond pattern. Place the ham on a rack in a baking pan and fill with 5cm of water. Set aside.
  • In a pan over medium-high heat, combine sugar, syrup, honey, and mustard. Stir until warm and fully mixed. Brush the glaze over the ham and bake for 45 minutes, basting every 15 minutes, until golden and caramelized.
  • Peel and quarter the pears after removing the rind from the lemon and rubbing the pears with it. Combine the pears with lemon rind, sugar, syrup, cinnamon, vanilla, and enough water to cover in a pan. Boil, then simmer until the pears are tender. Remove the pears and simmer the sauce until syrupy. Add cranberries for the last 5 minutes of cooking. Once done, return the pears to the pan and let it cool.
  • Slice the ham thinly and arrange it with the pears and berries. Drizzle some of the syrup on top and garnish with chervil, if desired.
