Lemon thyme & garlic prawns

Ingredients:
  • 24 large green prawns, peeled, deveined, tails intact
  • 20.00 ml lemon thyme leaves
  • 125ml lemon juice
  • 60ml oil
  • 28.60 gm honey or maple syrup
  • Salt & freshly ground pepper
  • 3 Lebanese cucumbers, peeled, chopped
  • 500g cherry tomatoes, quartered
  • 250.00 ml fresh continental parsley leaves, torn
Instructions:
  • Skewer the prawns from top to tail on bamboo skewers and arrange them in a spacious plastic container.
  • Mix together lemon thyme leaves, lemon rind, lemon juice, garlic, oil, honey or maple syrup. Season with salt and pepper, then pour over the prawns. Refrigerate covered for 2-3 hours.
  • Mix together the cucumber, tomato, and parsley.
  • Preheat a barbecue grill over medium-high heat. Pat dry the prawns and grill for 2-3 minutes on each side or until they are cooked. Enjoy with a side of fresh salad and lemon wedges.
