Baked brie with lemon thyme

Make a festive Aussie bush-inspired baked brie for Christmas.
Ingredients:
  • 250g brie cheese
  • 4 sprigs fresh lemon thyme
  • 1 garlic clove, thinly sliced
  • Crackers, to serve
Instructions:
  • Preheat oven to 200°C (180°C fan-forced).
  • Cut out a 22cm circle from baking paper. Arrange the brie in the center of the paper. Create 6 small slits on the top of the cheese. Cut the thyme sprig into six pieces and insert them, along with the garlic slices, into the slits. Fold the baking paper over the brie to seal it. Transfer it to a baking tray and bake for about 20 minutes until the brie is gooey and soft.
  • Separate the leaves from the remaining thyme sprigs and finely chop them. Sprinkle the brie with the chopped thyme and serve with crackers.
