Elevate your Christmas in July celebration with a sophisticated potato side dish.
Ingredients:
  • 1kg chat potatoes
  • 25g butter
  • 3 garlic cloves, thinly sliced
  • 20.00 ml chopped fresh lemon thyme
Instructions:
  • 1. In a saucepan, add potatoes and cover with cold water. 2. Bring to a boil over medium-high heat, then reduce to medium heat. 3. Cook for 10 to 12 minutes until potatoes are tender. 4. Drain the potatoes before proceeding.
  • Place the potatoes back in the pan over medium heat. Combine with butter and oil, tossing occasionally, until golden brown, about 5 to 6 minutes. Stir in the garlic and thyme, and cook for an additional 2 minutes. Season with salt and pepper and serve.
