Indulge in decadent gluten-free chocolate chip cookies using almond and coconut flour for a delicious grain-free alternative to classic treats.
Ingredients:
  • 1 cup butter, at room temperature
  • 1 cup packed light brown sugar
  • 2 eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 3 cups blanched almond flour
  • 0.25 cup coconut flour
  • 1.25 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 2 cups chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a bowl, blend butter and brown sugar until smooth and creamy using an electric mixer or food processor. Add eggs and vanilla, then mix well. Stir in almond flour, coconut flour, salt, and baking soda until combined; gently fold in chocolate chips. Use a rounded teaspoon to drop dough onto a baking sheet.
  • Bake in the oven until the edges of cookies are golden brown, for 8 to 12 minutes.
