Indulgent chocolate chip cookies with a rich, flourless chocolate cake flavor. Gluten-free and grain-free.
Ingredients:
  • 6 ounces dark chocolate, chopped
  • 3 egg whites
  • 1 pinch cream of tartar
  • 0.5 teaspoon vanilla extract
  • 0.25 cup semi-sweet chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and get your baking sheet elegantly lined with parchment paper.
  • Melt the chocolate in a double boiler, stirring often and scraping the sides with a rubber spatula to prevent burning. Allow the chocolate to cool slightly as you get the egg whites ready.
  • Whisk egg whites in a glass or metal bowl until foamy. Gradually add sugar while beating until stiff peaks form, creating sharp peaks when lifting the beater. Stir in cream of tartar.
  • Combine a portion of the egg whites with the cooled melted chocolate, gently folding until smooth. Next, fold the chocolate mixture into the rest of the egg whites. Add vanilla extract and mix gently. Stir in chocolate chips, then drop spoonfuls onto the baking sheet.
  • Bake the cookies until the centers are set, around 10 to 15 minutes.
