Zesty lemon frosting adds a refreshing touch to these irresistible chewy bar cookies.
Ingredients:
  • 1/2 cup butter, softened
  • 1 cup Gold Medal™ all-purpose flour, sifted
  • 1/4 cup powdered sugar, sifted
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 3 tablespoons butter, softened
  • 1 1/2 cups powdered sugar, sifted
  • 4 teaspoons freshly squeeze lemon juice
  • 1/2 teaspoon lemon zest (or more to taste)
Instructions:
  • Preheat oven to 350°F and generously grease an 8-inch square pan.
  • Combine butter, flour, and 1/4 cup powdered sugar in a medium bowl. Use a pastry blender or two knives to blend until the mixture resembles crumbs. Press the mixture evenly into the bottom of the pan.
  • Bake until the edges of the crust just start to brown, about 20 to 25 minutes. Be careful not to over bake.
  • In a medium bowl, use an electric mixer on medium-high speed to beat all filling ingredients together until smooth.
  • Drizzle the delicious filling over the warm crust, then bake for another 25 minutes until the filling is perfectly set.
  • Allow the baked goods to reach room temperature before adding the frosting.
  • In a small bowl, cream together butter and 1 1/2 cups powdered sugar using an electric mixer on low speed until smooth. Then, mix in the remaining ingredients and beat on high speed until fully combined. Finally, generously spread the frosting over the filling.
  • Slice into bite-sized pieces and enjoy cold or at room temperature.
