Dreamy lemon meringue pie with fresh lemon juice, zest, and fluffy meringue topping.
Ingredients:
  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 0.25 teaspoon salt
  • 1.5 cups water
  • 2 lemons, juiced and zested
  • 2 tablespoons butter
  • 4 egg yolks, beaten
  • 1 (9 inch) pie crust, baked
  • 4 egg whites
  • 6 tablespoons white sugar
Instructions:
  • Collect all the ingredients needed and preheat the oven to 325 degrees F (162 degrees C).
  • For the filling: In a medium saucepan, combine 1 cup sugar, flour, cornstarch, and salt. Add water, lemon juice, and lemon zest. Cook over medium-high heat, stirring often, until it boils. Stir in butter.
  • In a small bowl, gently whisk the egg yolks while slowly incorporating 1/2 cup of the hot sugar mixture.
  • Blend the whisked egg yolk mixture back into the remaining sugar mixture. Bring to a boil, stirring constantly until the mixture thickens. Remove from heat and pour the luscious filling into the baked pastry shell.
  • Make the meringue by beating egg whites in a glass, metal, or ceramic bowl with an electric mixer until foamy. Gradually add sugar while continuing to beat until stiff peaks form.
  • Top the pie filling with a smooth layer of meringue, making sure to seal it at the edges with the crust.
  • Bake until the meringue turns a beautiful golden brown, approximately 20-25 minutes in a preheated oven.
