Grandma's egg-free and dairy-free yeast rolls recipe, passed down since the Depression Era.
Ingredients:
  • 2.5 cups warm water
  • 1.5 tablespoons active dry yeast
  • 0.5 cup white sugar
  • 1 tablespoon salt
  • 0.75 cup shortening (such as Crisco®)
  • 7 cups all-purpose flour, divided, or more as needed
Instructions:
  • In the bowl of a stand mixer fitted with the dough hook, watch the yeast dissolve in warm water. Once you see foam forming, combine sugar and salt. Add 3 cups of flour and 3/4 cup of shortening. Mix with the dough hook until the mixture resembles a thick pancake batter.
  • Fill a pot with warm water.
  • Cover the mixer bowl with plastic wrap and a towel, then place it over the pot of hot water without touching the water. Allow the dough to rise until doubled in size, about 45 minutes to 1 hour.
  • Return the bowl to your stand mixer and slowly incorporate the remaining 4 cups of flour until the dough is smooth and elastic, adding up to 1 extra cup if needed.
  • Generously coat two 9x13-inch glass pans with shortening.
  • Divide the dough into 24 balls and distribute evenly among the pans. Cover with plastic wrap and a towel, then allow the dough to rise in a warm spot until it doubles in size for about 1 hour. The balls will expand and touch the sides of the pans.
  • Preheat your oven to 375°F (190°C) for the perfect temperature to start cooking.
  • Bake rolls in the oven until they turn a delicious golden brown, for about 25 to 30 minutes. Once done, take them out and generously brush the top with melted butter.
