Indulgent pineapple cake drizzled with butter sauce, nut-free.
Ingredients:
  • 1 cup white sugar
  • 1 (20 ounce) can crushed pineapple, with juice
  • 2 cups cake flour
  • 1 teaspoon baking soda
  • 1 cup brown sugar
  • 0.5 cup butter
  • 0.75 cup evaporated milk
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, and sift together the flour and baking soda; set aside.
  • In a large bowl, whisk together eggs, 1 cup white sugar, and pineapple with its juice. Gently fold in the flour mixture. Transfer the batter to the prepared pan and sprinkle brown sugar on top.
  • Once the cake is baked in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean, take it out and use a fork to prick the top. Drizzle the topping over the hot cake.
  • Prepare the topping by melting butter, adding evaporated milk, 1 cup of white sugar, and 1 teaspoon of vanilla in a saucepan. Heat on medium-low, stirring occasionally until the sugar dissolves and the mixture is thin. Drizzle over the warm cake.
