Granny's famous coffee cake: light, moist, cinnamon-swirled delight.
Ingredients:
  • 0.5 cup shortening
  • 1 cup white sugar
  • 1 (8 ounce) container sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 10-inch tube pan by greasing and flouring it. Sift together the flour, baking powder, baking soda, and salt, then set it aside.
  • Combine shortening and sugar in a large bowl until light and fluffy. Mix in eggs one at a time, then add sour cream and vanilla. Gently fold in the flour mixture until just combined. Pour half the batter into the pan. In a separate bowl, mix brown sugar and cinnamon, then sprinkle half over the batter. Add remaining batter and sprinkle with the rest of the topping. Swirl lightly with a knife. Enjoy!
  • Place in the preheated oven and bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
