Decadent coffee cake muffins made with a healthier twist using applesauce to replace some butter. Perfect for any occasion, from casual mornings to celebratory birthdays.
Ingredients:
  • 1 cup chopped pecans
  • 0.75 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 2 teaspoons vanilla extract
  • 1.5 teaspoons instant coffee granules
  • 1 cup white sugar
  • 0.5 cup unsalted butter, softened
  • 4 large eggs
  • 0.5 cup unsweetened applesauce
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Cover a rimmed baking sheet with parchment paper, and line two 12-cup muffin tins with paper liners.
  • Arrange pecans on the lined baking sheet for a delicious crunch.
  • Roast in the preheated oven for 6 to 8 minutes until fragrant. Transfer to a medium bowl and mix with brown sugar and cinnamon until well coated; then set aside.
  • Sift together flour, baking powder, and salt in one bowl. In another bowl, mix milk, vanilla extract, and coffee granules.
  • In a large mixing bowl, cream together sugar and butter using an electric mixer until smooth and fluffy. Add eggs one at a time, beating well after each addition. Mix in applesauce until creamy. Gradually add flour mixture and milk mixture in two parts, beating until just combined.
  • Evenly distribute a generous tablespoon of batter into each cupcake liner, ensuring the base is completely covered. Spoon half a tablespoon of pecan filling on top of each one. Add another layer of batter on top, finishing with the remaining pecan filling for a deliciously layered treat.
  • Bake until a toothpick inserted in the center comes out clean, about 18 to 25 minutes. Allow to cool in the tins for 10 minutes, then transfer to cooling racks to cool completely.
