Irresistible cinnamon coffee cake featuring double layers of buttery streusel, perfect for any meal or gathering.
Ingredients:
  • 0.25 cup cinnamon sugar
  • 1 cup firmly packed light brown sugar
  • 0.75 cup chopped walnuts
  • 0.25 cup butter, softened
  • 0.25 cup all-purpose flour
  • 2.5 teaspoons ground cinnamon
  • 3 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 2 large eggs
  • 1.5 cups white sugar
  • 0.66666668653488 cup butter, melted
  • 1 cup milk
  • 0.25 cup sour cream
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then generously grease a 9x13-inch baking dish with cooking spray and sprinkle the bottom with cinnamon sugar.
  • In a bowl, mix brown sugar, walnuts, softened butter, flour, and cinnamon to create the streusel mixture. Use a fork to blend the ingredients until they form a crumbly texture.
  • In a separate bowl, combine flour, baking powder, and salt for the batter. In another bowl, use an electric mixer to beat eggs until frothy; then mix in white sugar and melted butter until creamy. Add milk, sour cream, and vanilla extract and beat until smooth. Combine the flour mixture into the milk-butter mixture until the batter is smooth and well blended.
  • Layer half of the batter into the prepared baking dish, sprinkle half of the streusel mix on top. Then, spread the remaining batter over the streusel layer and finish by topping with the rest of the streusel.
  • Bake the dish on the center rack in the preheated oven for 15 to 20 minutes, or until a fork inserted in the center comes out clean.
