Delicious pineapple cake with a sweet glaze, made easy from scratch using canned pineapple and basic cake ingredients.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 teaspoon vanilla extract
  • 0.5 cup packed light brown sugar
  • 0.5 cup chopped walnuts
  • 0.5 cup unsalted butter
  • 0.5 cup white sugar
  • 0.5 cup evaporated milk
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine flour, sugar, baking soda, and salt. Add undrained pineapple, eggs, and vanilla; mix until just combined. Transfer the batter to an ungreased 9x13-inch baking pan.
  • Prepare the topping by combining brown sugar and walnuts in a small bowl, then sprinkle over the cake batter.
  • Bake until a toothpick inserted into the center comes out clean, about 25-35 minutes in the preheated oven.
  • Prepare the glaze while the cake is in the oven: In a small saucepan over medium-low heat, melt butter together with sugar, evaporated milk, and vanilla. Stir occasionally until the butter melts, sugar dissolves, and the mixture becomes thin.
  • As soon as the cake is out of the oven, generously drizzle the warm glaze over the top. Enjoy the cake warm or at room temperature.
