Indulgent grasshopper lush dessert with fudgy brownie base, mint creme Oreo cookies, mint pudding, Cool Whip, and crushed cookies. Perfect for easy party prep in a 13x9 dish. Don't expect any leftovers!
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, oil and eggs called for on brownie mix box for cakelike brownies
  • 25 Oreo mint creme chocolate sandwich cookies, coarsely chopped (about 3 1/2 cups)
  • 2 boxes (3.3 oz each) Jell-O™ white chocolate-flavor instant pudding & pie filling mix
  • 2 1/2 cups cold milk
  • 1 container (8 oz) Cool Whip frozen whipped topping, thawed
  • 1/4 teaspoon Betty Crocker™ green gel food color
  • 1/4 teaspoon peppermint extract
Instructions:
  • Preheat oven to 350°F and generously spray the bottom of a 13x9-inch pan with cooking spray.
  • Prepare the brownie batter following the instructions on the box for a cakelike consistency. Gently fold in 1 cup of chopped cookies. Spread the batter in the pan and bake for 24 to 26 minutes, or until a toothpick inserted 2 inches from the side comes out almost clean. Allow the brownies to cool completely for about 1 hour before enjoying.
  • In a large bowl, whisk together dry pudding mixes and milk for about 2 minutes until thick. Add 1 cup whipped topping, food color, and peppermint extract. Gently mix in 2 cups of chopped cookies. Spread this mixture over brownie, then dot with spoonfuls of remaining whipped topping and spread evenly on top. Chill in the refrigerator for 4 hours before serving.
  • Sprinkle the remaining cookies on top just before serving, then cut into bite-sized squares and refrigerate any leftovers.
