Hearty vegan soup with beans, veggies, and flavorful vegetable broth.
Ingredients:
  • 2 carrots, chopped
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 1 stalk celery, chopped
  • 4 cups vegetable broth
  • 1 large potato, chopped
  • 2 bay leaves
  • 1 tablespoon dried basil
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 1 pinch ground thyme
  • 2 (15 ounce) cans great Northern beans, rinsed and drained
Instructions:
  • In a stockpot over medium heat, sauté onion and garlic in olive oil until onion is tender, about 5 minutes.
  • Combine carrots and celery with the onion mix. Add vegetable broth, potato, bay leaves, basil, sea salt, pepper, and thyme to the pot. Bring to a boil, then simmer on medium-low for 20 minutes until veggies start to soften.
  • Add the beans to the soup and simmer for an additional 20 minutes until they are heated through and tender.
