Instant Pot ham and bean soup: A comforting and hearty meal for chilly nights, packed with creamy great Northern beans.
Ingredients:
  • 2 medium carrots, sliced
  • 2 celery ribs, chopped
  • 4 (15.5 ounce) cans great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 2 cups cubed fully cooked ham
  • 1 teaspoon chili powder
  • 0.5 teaspoon minced garlic
  • 0.25 teaspoon ground black pepper
  • 1 bay leaf
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot) by selecting the Saute function. Melt butter in the pot, then add carrots, celery, and onion. Saute until vegetables are tender, about 5-7 minutes.
  • Combine beans, broth, ham, chili powder, garlic, pepper, and bay leaf in the pot. Seal the lid securely and choose the Soup setting as per the manufacturer's guidelines. Let it cook until the flavors blend, approximately 30 minutes.
  • Allow the pressure to naturally release for 10 to 40 minutes as per the manufacturer's instructions.
