Instant Pot ham and lentil soup - maximum flavor, minimum time.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup carrots, 1/4-inch slices
  • 2 cloves garlic, minced
  • 1.5 cups diced cooked ham
  • 1 cup lentils
  • 0.5 teaspoon dried basil leaves
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 1 small bay leaf
  • 1.25 teaspoons kosher salt
  • 0.5 teaspoon lemon juice
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot) using the Sauté function. Heat oil for a few minutes. Sauté onion and celery for 2 minutes. Sauté carrots for 4 minutes. Add garlic and cook for 2 minutes. Combine ham, lentils, basil, oregano, and thyme. Pour in chicken broth, tomato sauce, and water. Stir in bay leaf.
  • Secure the lid and activate high pressure as per the manufacturer's guidance. Set the timer for 8 minutes and wait for 10 to 15 minutes for pressure to build.
  • Follow the natural-release method as per the manufacturer's instructions for 10 to 40 minutes. Remove the lid carefully, discard the bay leaf, and stir in salt, lemon juice, and pepper.
