Instant Pot Mexican lentil soup: cozy, veggie-packed, and spicy, ready in no time!
Ingredients:
  • 1 tablespoon olive oil
  • 1 large carrot, peeled and sliced
  • 1 small onion, chopped
  • 1 yellow bell pepper, chopped
  • 1 fresh jalapeño chile pepper, seeded and chopped
  • 5 cups low-sodium chicken broth
  • 1 (16 ounce) jar picante sauce
  • 1.25 cups dry lentils
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • 0.5 cup chopped fresh cilantro
  • 1 tablespoon lime juice
Instructions:
  • Preheat your Instant Pot by selecting the Saute function. Add olive oil and heat for one minute. Toss in carrot, onion, bell pepper, and jalapeno, cooking for two minutes. Introduce garlic and saute for another 30 seconds. Press Cancel to finish.
  • Combine the broth, picante sauce, lentils, taco seasoning, and cumin, stirring well. Secure the lid, select high pressure, and set the timer for 6 minutes following the manufacturer's instructions. Let the pressure build for 10 minutes.
  • Follow the manufacturer's natural-release method for about 10 minutes, then uncover and mix in fresh cilantro and lime juice. Serve hot in bowls right away.
