Instant Pot Mexican Beef Taco Filling

Quick and easy Mexican beef and bacon taco filling made effortlessly in an Instant Pot.
Ingredients:
  • 0.25 pound bacon, cut into 1 1/2-inch pieces
  • 0.5 pound beef sirloin, cut into small pieces
  • 0.5 pound carne molida (finely chopped beef)
  • 1 white onion, shaved into slivers
  • 2 (1.41 ounce) packages sazon seasoning with cilantro and achiote (such as Goya®), divided
  • 2 Roma tomatoes
  • 1 jalapeno pepper, sliced
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
Instructions:
  • 1. Preheat a multi-functional pressure cooker (e.g. Instant Pot) by selecting the Saute function. 2. Sear the bacon, beef sirloin, carne molida, and onion in the cooker for 10 minutes. 3. Mix in 1 packet of sazon seasoning, stir well. 4. Cancel the Saute function and securely close the lid.
  • Choose high pressure based on instructions; set timer for 15 minutes. Let pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to release pressure naturally for 25 minutes, then carefully use the quick-release method for about 5 minutes. Remove the lid.
  • Place fresh Roma tomatoes and spicy jalapeno pepper into the cooker. Seal the lid securely. Choose high pressure based on the manufacturer's guidelines and set the timer for 5 minutes. Wait 10 to 15 minutes for the pressure to build up.
  • Carefully release pressure using the quick-release method following manufacturer's instructions, then unlock and remove the lid after about 5 minutes.
  • Peel tomatoes gently, crush them, and mix in the rest of the sazon packet, chili powder, and cumin.
