Instant Pot Spanish rice: Spiced up with broth, tomato sauce for a quick and flavorful dish in 25 minutes using pantry staples.
Ingredients:
  • 1 tablespoon avocado oil, or more as needed
  • 0.5 medium onion, finely chopped
  • 2 large cloves garlic, minced
  • 1 cup long-grain rice
  • 1.5 cups low-sodium chicken stock
  • 0.5 cup tomato sauce
  • 0.25 teaspoon ground cumin
Instructions:
  • Preheat your Instant Pot on the medium sauté setting.
  • Drizzle the pot with luxurious avocado oil. Sauté the onion until tender, for about 4 to 5 minutes. Introduce the garlic and let it cook until aromatic, approximately 30 seconds.
  • Add the rice to the pot and stir until each grain is coated with oil and has a light brown color. Pour in the chicken stock and deglaze the pot by stirring to loosen any browned bits from the bottom.

  • Combine tomato sauce with a sprinkle of salt, cumin, and cayenne pepper for a flavorful kick.
  • Secure the lid tightly, ensuring it is locked in place. Seal the vent and choose the high-pressure setting. Set a timer for 7 minutes and patiently wait for the pressure to build, typically taking 10 to 15 minutes.
  • After 5 minutes, carefully release pressure using the quick-release method following the manufacturer's instructions. Remove the lid, then stir the rice before serving.
