Quick and easy ham and bean soup using canned great northern beans and pantry staples for a hearty weeknight dinner.
Ingredients:
  • 1 thick slice fully cooked ham with bone
  • 2 tablespoons butter, divided
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 (16 ounce) can great northern beans, undrained
  • 2 cups water, or as needed
  • 2 large bay leaves
Instructions:
  • Separate the ham from the bone and dice into bite-sized pieces while keeping the bone for added flavor.
  • In a skillet over medium heat, melt 1 tablespoon of butter until sizzling. Cook the ham, stirring occasionally, until it's lightly browned, which should take about 4 minutes.
  • Simultaneously, melt the remaining tablespoon of butter in a large saucepan. Sauté onion, carrots, and garlic until the onion turns translucent, approximately 5 minutes.
  • Combine beans with flavorful vegetables, ham, ham bone, water, and aromatic bay leaves. Season with salt and pepper. Let it come to a boil, then reduce heat and simmer for 25 minutes. Adjust thickness by adding water as needed.
  • Before serving, gracefully remove the ham bone and bay leaves from the dish.
