Elevate baked potatoes with cheese, egg, butter, and milk for irresistible twice-baked perfection.
Ingredients:
  • 0.25 cup olive oil
  • 6 baking potatoes
  • 0.5 cup shredded Cheddar cheese
  • 1 egg, beaten
  • 0.25 cup butter
  • 1 cup sliced green onions, divided
  • 0.5 cup milk
  • paprika to taste
Instructions:
  • Preheat the oven to a piping hot 400 degrees F (200 degrees C).
  • Combine oil, salt, and pepper in a small bowl and massage mixture onto potato skins.
  • Place the potatoes directly on the oven rack and bake in a preheated oven for 50 to 60 minutes until they're soft.
  • 1. Take the potatoes out of the oven and carefully peel off the tops. Scoop out the potato flesh into a large bowl, keeping the skins intact. Combine with cheese, egg, butter, and half of the green onions. Mash the potatoes while slowly mixing in the milk. Fill the reserved skins with the mixture and garnish with the rest of the green onions and paprika.
  • Continue baking until a glorious golden brown color is achieved, approximately 15 minutes more.
