Delicious vegetarian frittata with spinach, roasted red peppers, and 2 Greek cheeses.
Ingredients:
  • 3.5 cups roughly chopped spinach, or to taste
  • 6 ounces roasted red peppers, cut into thin strips
  • 2 ounces grated Kasseri cheese
  • 1 tablespoon Greek seasoning (such as Cavender's®)
  • 6 large eggs
  • 0.25 cup prepared garlic hummus
  • 0.25 cup table cream
  • 2 ounces crumbled feta cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, melt butter. Add garlic and cook until softened and fragrant, about 1 to 2 minutes. Toss in spinach and saute until wilted, for about 1 to 2 minutes. Stir in peppers and cook for an additional 1 to 2 minutes. Season with Greek seasoning. Remove from heat, sprinkle Kasseri cheese over the vegetables, and transfer the mixture to a 9-inch pie dish.
  • Combine eggs, hummus, and cream until smooth. Drizzle the egg mixture over the vegetables, then sprinkle with crumbled feta cheese.
  • Bake until the center is puffed and the top is light golden brown in the preheated oven for 20-25 minutes. For extra browning, broil the frittata for 1-2 minutes. Slice and serve.
