Greek Honey Cake

Citrus-infused cake with walnuts, drenched in honey syrup.
Ingredients:
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon orange zest
  • 0.75 cup butter
  • 0.75 cup white sugar
  • 3 eggs
  • 0.25 cup milk
  • 1 cup chopped walnuts
  • 1 cup white sugar
  • 1 cup honey
  • 0.75 cup water
  • 1 teaspoon lemon juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9-inch square pan by greasing and flouring it. In a mixing bowl, combine the flour, baking powder, salt, cinnamon, and orange rind, then set aside.
  • In a large bowl, whip the butter and 3/4 cup sugar until fluffy. Gradually add eggs, then mix in the flour and milk alternately, stirring until combined. Fold in the walnuts.
  • Transfer the batter into the pan and bake in the preheated oven for 40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 15 minutes, then slice into diamond shapes and drizzle with honey syrup.
  • To make the Honey Syrup: Combine honey, 1 cup sugar, and water in a saucepan. Simmer for 5 minutes, then add lemon juice, bring to a boil, and cook for an additional 2 minutes.
