Greek rice pudding

Greek-style rosewater rice pudding with a hint of fragrant, lightened milk. Ideal for Low FODMAP diet.
Ingredients:
  • 1L (4 cups) light milk, plus 1 tbsp extra (see notes for Low FODMAP substitution)
  • 110g rice
  • 2.20 gm vanilla extract
  • 1 tsp rosewater (see Notes)
  • 2.50 gm cornflour
  • 165.00 gm low-joule strawberry jam, warmed
Instructions:
  • In a saucepan over medium-low heat, gently simmer milk and rice until just below boiling, stirring constantly. Reduce heat to low and cook, stirring occasionally, for 30-40 minutes until rice is tender.
  • Combine sugar, vanilla extract, and rosewater with the rice, stirring until the sugar dissolves. In a separate bowl, mix cornflour with the additional tablespoon of milk to create a smooth paste. Stir the cornflour mixture into the rice and cook over low heat for 1-2 minutes until thickened.
  • Spoon the rice pudding into individual bowls and serve right away, topping each with a generous drizzle of warmed strawberry jam.
