Enjoy a delicious Greek-inspired lunch.
Ingredients:
  • 125g tub microwave long-grain white rice
  • 1 petite yellow capsicum, thinly sliced
  • 1 large vine-ripened tomato, cut into wedges
  • 1/2 Lebanese cucumber, peeled into ribbons
  • 8 pitted kalamata olives
  • 50g reduced-fat fetta, crumbled
  • 62.50 ml fresh flat-leaf parsley leaves
  • 95g can tuna in oil, drained
  • 42.40 gm lemon herb salad dressing
Instructions:
  • Prepare fluffy rice using the microwave according to the instructions on the packet.
  • Combine capsicum, tomato, cucumber, olives, fetta, parsley, and tuna in a bowl. Drizzle with dressing, season with salt and pepper, and gently toss to mix. Serve.
