Indulge in warm, crispy pan-fried feta paired with juicy garden-fresh tomatoes.
Ingredients:
  • 8 ounces feta cheese
  • 1 egg
  • 1 teaspoon finely chopped fresh oregano
  • 0.5 cup all-purpose flour
  • 2 tablespoons olive oil
  • freshly ground black pepper
  • 2 large ripe tomatoes, sliced
  • 1 lemon, cut into wedges
Instructions:
  • Cut feta into 2x3/8 inch squares (approximately 8 slices). In a small bowl, whisk together the egg and oregano. Dip each feta slice in the egg mixture, shake off excess, and coat with flour.
  • In a frying pan over medium heat, heat olive oil. Cook the cheese in the oil until golden on both sides. Remove and pat dry with paper towels.
  • Place the feta on a platter alongside thick tomato slices, sprinkle with freshly ground black pepper, and add a finishing touch with lemon wedges for garnish.
