Quick and flavorful Greek-style braised lamb, perfect for cozy winter nights. Ready in just 25 minutes.
Ingredients:
  • 8 Graze Lamb Loin Chops
  • 1 brown onion, thinly sliced
  • 1 garlic clove, thinly sliced
  • 2 x 400g cans cherry tomatoes
  • 55g olive
  • 2 x 250g tubs Cheddar Mash
  • 40.00 ml oregano leaves
Instructions:
  • Preheat a large frying pan over high heat. Sear the lamb for 2 minutes on each side until golden brown. Plate the lamb and tent with foil to keep it warm.
  • Sauté onion and garlic until onion is soft. Add lamb back to the pan along with tomatoes and olives. Season with salt and pepper. Bring to a boil, then lower the heat and simmer until the lamb is cooked through, about 5 mins.
  • Heat the mash according to the instructions on the packet.
  • Plate the lamb mixture evenly among serving dishes and generously sprinkle with fragrant oregano.
