Delicious Greek-inspired vegetarian gnocchi recipe.
Ingredients:
  • 400g ripe tomatoes, quartered
  • 2 red capsicums, quartered, seeds removed
  • 2 unpeeled garlic cloves
  • Olive oil, to drizzle
  • 1kg potato gnocchi
  • 60g olive
  • 20.00 ml chopped flat-leaf parsley
  • 75g marinated feta
Instructions:
  • Preheat the oven to 200°C for a perfect bake.
  • On a baking tray, arrange tomato, capsicum, and garlic. Coat with oil and season generously. Roast for 20-25 minutes until tender. Once cooled, peel garlic. In a food processor, blend garlic, tomato, capsicum, and juices until velvety. Adjust seasoning to your liking.
  • Prepare the gnocchi as directed on the package. Once cooked, drain and return to the pan. Mix in the sauce, olives, and parsley, stirring well. Serve with crumbled feta and a side of rocket salad, if desired.
