Elevate weeknight dinners with this fragrant prawn dish.
Ingredients:
  • 300g couscous
  • 18.20 gm olive oil
  • 1 onion, chopped
  • 5.00 gm ground cumin
  • 2.50 gm paprika
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground turmeric
  • 80g sultana
  • 170g capsicum
  • 500g prawns, peeled (tails intact), deveined
  • 600g canned chopped tomatoes
  • 82.50 ml chopped coriander leaves
  • Lemon wedges, to serve
Instructions:
  • In a heatproof bowl, gently pour over 1 1/2 cups (375ml) of boiling water with 1 teaspoon of salt over the couscous. Cover the bowl with a tea towel and let it sit for 5 minutes to prepare the prawns.
  • In a deep frypan over medium heat, sauté the onion in hot oil until softened, about 3-4 minutes. Stir in spices, sultanas, and capsicum for 1 minute. Mix in the prawns, ensuring they are coated in spices, then add the tomato and simmer for 2-3 minutes until prawns are cooked through and the sauce slightly thickens. Season with salt and pepper to taste.
  • Fluff the couscous with a fork, then mix in 2 tablespoons of coriander. Serve prawns topped with the rest of the coriander, along with the couscous and lemon.
