Create Greek-inspired meat cups filled with seasoned mashed potatoes and feta cheese.
Ingredients:
  • 1 lb. lean ground beef
  • 1/4 cup Progresso™ Plain Bread Crumbs
  • 1 to 2 garlic cloves, minced
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/3 cups plain mashed potato mix (dry)
  • Water
  • Milk
  • Margarine or butter
  • Salt
  • 1 1/3 oz. (1/3 cup) crumbled garlic and herb feta cheese
  • 1/3 cup pitted kalamata olives, sliced
  • 1/3 cup chopped seeded tomato
  • 1/4 cup finely chopped green onions
Instructions:
  • Preheat oven to 375°F. Mix ground beef, bread crumbs, garlic, oregano, 1/2 teaspoon salt, and egg in a large bowl until well combined. Divide mixture evenly into 8 ungreased muffin cups, pressing it into the bottom and up the sides of each cup to create a crust.
  • Prepare the potatoes in a medium saucepan according to package instructions with water, milk, margarine, and salt. Stir in feta cheese gently, then fill the cups lined with beef with the potato mixture.
  • Position a cookie sheet on the oven rack underneath the muffin pan to catch any spills. Bake at 375°F for 15 to 20 minutes until the beef is fully cooked. Remove the cups from the pan and carefully transfer them to individual serving plates. Garnish with olives, tomatoes, and onions before serving.
