Quick Mediterranean-style bolognaise: Ready in 30 minutes!
Ingredients:
  • 18.20 gm olive oil
  • 2 zucchini, coarsely grated
  • 1 red onion, coarsely grated
  • 500g Lamb Mince
  • 1 red capsicum, seeded, finely chopped
  • 2 x 400g cans diced tomatoes
  • 20.00 ml chopped mint
  • 400g spaghetti
  • 75g olive
  • 62.50 ml oregano leaves
  • 100g feta, crumbled
Instructions:
  • In a large frying pan over medium-high heat, heat the oil. Add zucchini and onion and cook until onion softens, about 5 minutes. Add mince and capsicum, season, and continue cooking for another 5 minutes, breaking up any lumps with a wooden spoon until the mince changes color.
  • Stir in the tomato and mint into the mince mixture, season to taste. Cover and simmer for 10 minutes, stirring occasionally, until the sauce slightly thickens. (Refer to notes for freezing instructions.)
  • Cook the spaghetti in a large saucepan of boiling water according to package instructions until just tender. Drain thoroughly.
  • Serve the spaghetti and bolognaise in individual bowls, then garnish with olives, oregano leaves, and crumbled feta cheese.
