Get adventurous with this Greek-inspired pasta dish for a unique midweek meal.
Ingredients:
  • 2 garlic cloves, finely chopped
  • Grated zest of 1 lemon
  • 22.20 gm tomato paste
  • 600g lamb mince
  • 1 tsp dried oregano
  • 400g can chopped tomatoes
  • 125ml red wine
  • 250g punnet cherry tomatoes, halved
  • 400g spaghetti
  • 100g feta, roughly crumbled
  • 75g olive
  • 125.00 ml mint leaves, roughly chopped
Instructions:
  • In a saucepan over medium heat, warm the olive oil. Sauté the onion, garlic, and lemon zest until softened, about 3-4 minutes. Stir in the tomato paste and cook for 1 minute. Then, add the lamb mince and brown it for 2-3 minutes, stirring continuously.
  • Combine fragrant oregano, canned tomatoes, and wine in a pot. Season generously and simmer for 10 minutes until the sauce slightly thickens. Toss in cherry tomatoes and cook for another 5 minutes until soft and beginning to break down.
  • Cook the spaghetti in a large pot of boiling salted water following the package directions. Drain the pasta.
  • Portion the pasta into individual bowls and generously spoon the savory lamb sauce on top. Sprinkle the crumbled feta, olives, and fresh mint over each serving before presenting it to enjoy.
