Green bean and prosciutto bundles with pesto

Enjoy crunchy, versatile beans whole or in salads for a deliciously crisp dining experience.
Ingredients:
  • 200g green round beans, topped
  • 3 slices prosciutto, halved crossways
  • 80g (1/3 cup) bought basil pesto (see note)
Instructions:
  • Preheat oven to 200°C. Boil beans in water for 2 minutes until tender crisp. Drain and cool under cold running water.
  • Divide the beans into 6 equal portions, then wrap each portion with a slice of prosciutto. Arrange the wrapped beans seam-side down on a baking tray and drizzle with oil.
  • Bake until prosciutto is golden, then drizzle with pesto before serving.
