Chill out with this satisfying lunch side dish.
Ingredients:
  • 2 garlic cloves
  • 1 small red chilli, roughly chopped
  • 30.00 ml dried shrimp (see note) (optional)
  • Zest and juice of 2 limes
  • 16.00 gm brown sugar
  • 40.00 ml rice vinegar
  • 18.20 gm peanut oil
  • 21.00 gm light soy sauce
  • 300g thin green beans, blanched
  • 82.50 ml chopped roasted peanuts
Instructions:
  • In a mortar, combine garlic, chili, dried shrimp, and lime zest. Crush the ingredients with a pestle until a smooth paste forms.
  • Add the lime juice, sugar, vinegar, oil, and soy sauce, and mix well.
  • Add the beans and peanuts to the bowl, then mix everything together until well combined.
