Green beans, peppers, tomatoes, and crispy bacon come together for a vibrant and flavorful dish.
Ingredients:
  • 2 pounds fresh green beans, washed and trimmed
  • 2 onions, chopped
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 2 hot yellow banana peppers, diced
  • 0.5 cup water
  • 6 slices bacon
Instructions:
  • In a large pot, combine green beans, onions, tomatoes, banana peppers, bell pepper, and water. Bring to a boil over high heat, then cover and simmer on low for about 10 minutes until green beans are tender.
  • While the green beans are steaming, place bacon slices in a medium skillet and fry over medium heat until crispy, about 10 minutes. Drain on paper towels, crumble, and set aside.
  • Transfer the green bean mixture and its juices to a serving dish. Sprinkle the crisp and savory crumbled bacon on top just before serving promptly.
