Green beans with cherry vinaigrette

Elevate green beans with cherries and almonds for a gourmet holiday side dish.
Ingredients:
  • 1.5kg fresh green beans, trimmed
  • 250g fresh cherries, halved, pitted
  • 21.00 gm fresh lemon juice
  • 20.00 ml red wine vinegar
  • 60g unsalted butter
  • 40.00 ml fresh flat-leaf parsley, chopped
  • 40.00 ml shallots, chopped (about 1 small)
  • 50g whole almonds, toasted, coarsely chopped
Instructions:
  • Boil green beans in salted water for 3 minutes until tender. Remove and let cool on paper towel-lined tray.
  • Blend the cherries, lemon juice, and vinegar until finely chopped. Transfer to a bowl and mix in parsley, shallots, and oil. Set aside.
  • In a heavy medium saucepan over medium-high heat, cook the butter, stirring often, for about 5 minutes until it turns golden brown. Stir the warm browned butter into the cherry mixture and season the vinaigrette with salt and pepper to taste.
  • Toss green beans in half of the warm vinaigrette in a large bowl to coat evenly. Season with salt and pepper to taste. Divide onto 8 plates, drizzle remaining vinaigrette, sprinkle with almonds, and serve promptly.
