Green beans with crispy pancetta and semi-dried tomatoes

Gourmet side dish ready in just 30 minutes - looks and tastes fantastic.
Ingredients:
  • 4 slices pancetta
  • 300g green round beans, topped
  • 82.50 ml torn fresh basil leaves
  • 62.50 ml semi-dried tomatoes, thinly sliced
  • 1/4 red onion, cut into thin wedges
  • 18.20 gm extra virgin olive oil
  • 2 tsp red wine vinegar
Instructions:
  • Preheat your oven to 200°C. Arrange the pancetta on a baking tray and bake for 5-8 minutes until it turns crispy and golden brown. Let it cool for a bit, then break into pieces.
  • Cook the beans in a pot of boiling water for 2-3 minutes until they are vibrant green and tender-crisp. Drain well.
  • Mix together the pancetta, fresh basil, ripe tomato, onion, high-quality oil, and vinegar in a spacious bowl. Season generously with freshly ground pepper.
  • Transfer the beans to a serving dish and generously spoon the flavorful tomato mixture over them.
