Transform Thanksgiving leftovers into delicious turkey enchiladas with cheese, sour cream, and green chile salsa.
Ingredients:
  • 3 cups shredded cooked turkey breast
  • 1.5 cups sour cream, divided
  • 1 (16 ounce) jar chunky, mild green chile salsa, divided
  • 1 (8 ounce) package shredded mild Cheddar cheese, divided
  • 1 (8 ounce) package shredded Monterey Jack cheese, divided
  • 8 (6 inch) flour tortillas
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Combine shredded turkey, 1/2 cup sour cream, 1/2 cup salsa, 1/2 package Cheddar cheese, and 1/2 package Monterey Jack cheese in a bowl. Fill tortillas with the mixture, roll them into enchiladas, and arrange them in a 9x13-inch pan.
  • Combine the rest of the sour cream with salsa, then drizzle over the enchiladas. Sprinkle the remaining Cheddar and Monterey Jack on top.
  • Bake until the cheese is bubbly and the enchiladas are heated through in the preheated oven for 30-40 minutes.
