Green Chile-Turkey Enchiladas

Transform your leftover turkey into a mouthwatering Mexican feast with our Green Chile-Turkey Enchiladas. Ready to bake in just 15 minutes for a delicious dinner in under an hour!
Ingredients:
  • 1 cup sour cream ranch dip
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 2 cups diced cooked turkey
  • 2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, undrained
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • Chopped tomatoes, chopped avocado and shredded lettuce, if desired
Instructions:
  • Preheat oven to 350°F and generously spray a 13x9-inch glass baking dish with cooking spray. Combine dip and flour in a large bowl, then mix in turkey, 1 cup of cheese, and the chiles.
  • Coat the bottom of a baking dish with a generous layer of enchilada sauce. Spread a spoonful of enchilada sauce on each tortilla, then add a heaping 1/3 cup of turkey mixture on top. Roll up the tortillas and place them seam side down in the baking dish. Finish by pouring the rest of the enchilada sauce over the top.
  • Cover with foil, bake for 25 minutes. Sprinkle 1 cup of cheese on top and bake uncovered for an additional 15 minutes, until heated through and the cheese is melted. Garnish with tomatoes, avocado, and lettuce before serving.
